Modification of fermented whey protein concentrates: Impact of sequential ultrasound and TGase cross-linking

Summary: The study aimed to investigate the impact of fermentation process on whey protein and improve the properties of fermented whey protein concentrate (FWPC) recovered by ultrafiltration-diafiltration operation. The effects of ultrasound pretreatment and transglutaminase cross-linking on the structural, functional, and physicochemical properties of FWPCs were examined. The sequential treatments resulted in increased molecular weight, improved zeta potential, enhanced solubility, and improved emulsifying activity and stability of FWPCs.

Four Different Structural Dietary Polyphenols, Especially Dihydromyricetin, Possess Superior Protective Effect on Ethanol-Induced ICE-6 and AML-12 Cytotoxicity: The Role of CYP2E1 and Keap1-Nrf2 Pathways

Summary: Polyphenols have potential protective effects on ethanol-induced liver injury by inhibiting cytotoxicity and oxidative stress, restoring intestinal permeability and gene expression, and promoting nuclear translocation of Nrf2. The dietary polyphenols DMY and API show the best ability to inhibit CYP2E1 and Keap1. Molecular docking experiments reveal that DMY and API can bind tightly to specific amino acid residues, suggesting their inhibitory effects on CYP2E1 and Keap1.

Improving gas-water interface properties and bioactivities of ?-lactalbumin induced by three structurally different saponins

Summary: The binding interactions, gas-water interface properties, and bioactivities between alpha-lactalbumin (alpha La) and tea saponin (Ts), gynostemma saponin (Gyp), and tribulus saponin (Tr) were characterized. The results showed that alpha La interacted with Ts and Gyp through hydrogen bond and van der Waals force, while it combined with Tr via hydrophobic interaction force. Ts, Gyp, and Tr increased the foaming ability of alpha La. The DPPH scavenging ability, ferrous reducing power, and alpha-glucosidase inhibition of alpha La-saponins were higher than those of alpha La, with alpha La-Ts showing the highest activity. The study provides valuable insights into the interaction mechanism between natural saponins and proteins for developing protein-saponin foaming agents in the food industry.

Preparation of pectin-based nanofibers encapsulating Lactobacillus rhamnosus 1.0320 by electrospinning

Summary: Pectin-based nanofibers were successfully prepared by electrospinning for the first time to encapsulate probiotics. The PVA/PEC nanofibers showed good thermal stability and had potential applications in probiotic preservation. The viability of Lactobacillus rhamnosus 1.0320 encapsulated by electrospinning was highest when the PVA:PEC ratio was 9:1, with a survival rate of 89.26%, even after storage at 4 degrees C for 21 days.

Electro-encapsulation of probiotics in gum Arabic-pullulan blend nanofibres using electrospinning technology
