The heated-induced gelation of soy protein isolate at subunit level: Exploring the impacts of a and a' subunits on SPI gelation based on natural hybrid breeding varieties

Hongling Fu et al.

Summary: Soy protein isolate (SPI) is widely used in the food industry for its gelation properties, and in this study, the influence of subunit composition on the gel properties of SPI was investigated. The deletion of the alpha ' subunit significantly enhanced the gel strength and water-holding capacity of the resultant gels, and this was attributed to changes in the physicochemical properties of the gel. The deletion of the alpha ' subunit also promoted the exposure of hydrophobic groups and the aggregation of subunits, which affected the heat-induced gelation of the gels. Overall, this study provides valuable insights for the development and application of soy protein products in food processing.

Introducing hydrophilic cellulose nanofiber as a bio-separator for water-in-salt based energy storage devices

Varisara Deerattrakul et al.

Summary: There has been great interest in energy storage devices in recent years, particularly in the use of water-in-salt based electrolytes in supercapacitors and lithium-ion batteries. However, the hydrophobic properties of the water-in-salt electrolyte on carbon surfaces make it unsuitable for use as a separator. This study introduces carboxylate-modified cellulose as a novel hydrophilic separator, which greatly improves the capacitive properties of the energy storage devices.

Silk fibroin and sericin polymer blends for sustainable battery separators

A. Reizabal et al.

Summary: Natural polymers, such as silk sericin, show promise as alternative materials for battery separator membranes. This study investigates the effect of silk sericin content on the physiochemical properties and electrochemical performance of the membranes. Increasing the silk sericin content reduces the overall crystallinity of the membranes. Adding 10 wt% of silk sericin improves the ionic conductivity and lithium transference number, resulting in a higher discharge capacity for batteries with a silk sericin separator.

Optimized Printed Cathode Electrodes for High Performance Batteries

Renato Goncalves et al.

Summary: The study investigates the influence of ink preparation methods and the chemical structure of polymer binders on the performance of printed batteries. It is found that a limited amount of ethylene in the copolymer binder enhances discharge capacity, while ink preparation methods have a larger impact on cathode performance. Gradually adding active and conductive materials to the solution can result in higher cathode charge/discharge capacity compared to other dispersion methods. The optimized cathode performance is related to the improved dispersion of cathode components.
