Evaluating the effects of different drying methods, carrier materials and their ratios to produce bioactive honey-like powder

Summary: This research investigated the effects of different drying methods, carrier material types, and ratios on the production and properties of honey-like powder. Samples produced by vacuum drying method had higher yield, tapped bulk density, water content and activity, diastase number, HMF content, and antioxidant activity. Honey-like powders containing gum Arabic and whey protein exhibited high diastase number and antioxidant activity, and low HMF content.

It found that a larger amount of protein drying aid was needed for sucrose-rich foods compared to pure sucrose, but not for fructose. Spray dried apple powder: Qualitative, rheological, structural characterization and its sorption isotherm

Summary: The qualitative analysis of spray dried apple powder (SDAP) showed that it had slightly higher moisture content and water activity compared to the apple powder available in the market (MP). However, SDAP demonstrated improved reconstitution properties and excellent flow characteristics. It also exhibited better stability and amorphous nature. The particle size distribution and sorption behavior of SDAP were also studied and predicted effectively.

Dehumidified Air-Assisted Spray-Drying of Cloudy Beetroot Juice at Low Temperature

Summary: This study investigated the physicochemical properties of powders obtained by spray drying cloudy beetroot juice using dehumidified air with or without carriers. Results indicated that drying without carriers at low temperatures (90 or 130 degrees C) was possible and resulted in powders with satisfactory properties. The addition of carriers led to lower betalain loss but lower overall process yields compared to powders without carriers. Best process yields were achieved for powders without carriers at 130 degrees C and 90 degrees C.
