A pattern-free paper enzyme biosensor for one-step detection of fish freshness indicator hypoxanthine with a microfluidic aggregation effect

Summary: A paper-based enzyme biosensor was developed for hypoxanthine (Hx) detection, allowing visual and one-step fish freshness detection. The biosensor utilized xanthine oxidase and horseradish peroxidase immobilized on nitrocellulose membranes, and chitosan oligosaccharide lactate-modified nitrocellulose membranes demonstrated excellent microfluidic aggregation effect. The biosensor showed potential as a powerful and reagent-free device for on-site freshness evaluation of fish by enabling color signal output and smartphone-based quantitative analysis.

ATP catabolism and bacterial succession in postmortem tissues of mud crab (Scylla paramamosain) and their roles in freshness

Summary: The diversity of the seafood microbiome and its role in the spoilage of seafood are important factors to consider for ensuring food safety. In this study, the postmortem ATP catabolism and bacterial community succession in different tissues of mud crab were investigated. The results showed that tissue-dependent ATP catabolism played a role in determining the freshness of mud crab, and the muscle K value was identified as an optimal freshness indicator. The bacterial community in the muscle exhibited more significant changes compared to the hepatopancreas, and specific bacterial taxa were found to contribute to the K value. These findings highlight the importance of considering the microbial community composition and interaction in understanding the spoilage of mud crab.

Quality changes and deterioration mechanisms in three parts (belly, dorsal and tail muscle) of tilapia fillets during partial freezing storage

Correlation of Mullet (Mugil cephalus) Fillet Color Changes with Chemical and Sensory Attributes during Storage at 0°C
