Selective antibacterial activities and storage stability of curcumin-loaded nanoliposomes prepared from bovine milk phospholipid and cholesterol

Summary: This study prepared curcumin-loaded nanoliposomes using bovine milk, krill phospholipids, and cholesterol, and found that bovine milk phospholipids resulted in nanoliposomes with higher encapsulation efficiency and larger vesicle size, while cholesterol improved the storage stability and antibacterial properties of the nanoliposomes. The findings suggest a potential for developing novel antibacterial agents for food preservation by targeting infectious bacteria.

Optimization of Electrospray-Assisted Microencapsulation of Probiotics (Leuconostoc lactis) in Soy Protein Isolate-Oil Particles Using Box-Behnken Experimental Design

By controlling the concentrations of SPI and SO, as well as the voltage range, it was found that the combination of specific concentrations of SPI and SO during electrospraying can effectively protect probiotic cells and improve encapsulation efficiency. Overall, the study showed that combining SPI and SO at specific concentrations during electrospraying can provide a protective effect on probiotic cells.
