Growth and inactivation of Listeria monocytogenes in sterile extracts of fruits and vegetables: Impact of the intrinsic factors pH, sugar and organic acid content

Marina Redding et al.

Summary: The study analyzed the growth potential of Listeria monocytogenes (Lm) in sterile fresh produce juices and identified the physicochemical characteristics that affect Lm growth. Lm showed significant growth in juices with pH >= 5.6 and low acidity, slight reduction in juices with pH 4.1 and pH 3.9, and no growth in juices with pH <= 3.8 and high acidity. The pH and acidity of the juices were found to be the primary determinants for Lm growth. Neutralizing acidic juices enabled Lm growth, except in Gala apple and peach juices. Lm populations also decreased in pH-neutral cauliflower juice, suggesting the presence of antilisterial substances.

Listeria monocytogenes in Irrigation Water: An Assessment of Outbreaks, Sources, Prevalence, and Persistence

Samantha Gartley et al.

Summary: As the population grows, growers may need to rely on a variety of water sources to meet the increasing demand. However, these sources may be contaminated with microbial pathogens, such as Listeria monocytogenes. Understanding the pathogen's survival duration in specific water sources is crucial for understanding its impact on produce outbreaks and consumer health.

Factors Associated With E. coli Levels in and Salmonella Contamination of Agricultural Water Differed Between North and South Florida Waterways

Claire M. Murphy et al.

Summary: This study aims to investigate the associations between microbial and physicochemical parameters in agricultural water in two produce-growing regions in Florida, USA, and to examine the pathogen ecology in waterways used for produce production. The results indicate differences between regions and substantial differences in risk factors for Salmonella contamination of agricultural water in different areas.

Peroxyacetic acid and chlorine dioxide unlike chlorine induce viable but non-culturable (VBNC) stage of Listeria monocytogenes and Escherichia coli O157:H7 in wash water

Pilar Truchado et al.

Summary: The recommended guidelines focus on preventing cross-contamination in washing practices, with studies showing that sanitizers can reduce levels of foodborne pathogens but may also induce viable but non-culturable cells. Chlorine was found to be more effective in preventing the presence of foodborne pathogens and cross-contamination in wash water compared to PAA and ClO2, indicating that chlorine is a better choice for sanitation.

A Systematic Review of Listeria Species and Listeria monocytogenes Prevalence, Persistence, and Diversity throughout the Fresh Produce Supply Chain

Anna Townsend et al.

Summary: Listeria species and L. monocytogenes were detected in every stage of the fresh produce supply chain, with the highest prevalence observed in natural environments and outdoor production. Data gaps were identified for future research on produce safety, particularly in the transportation and distribution center environment.
