Chemical Characteristics of Dark-Brown Humic-like Substances Formed from the Abiotic Condensation of Maillard Precursors with Different Glycine Concentrations

Summary: This study investigated the effect of different glycine concentrations on the abiotic humification pathways and characteristics of products from the Maillard reaction. The results showed that increasing glycine concentration simplified the structure of organic molecules in the supernatant and reduced the total organic carbon (TOC) content. A higher glycine concentration also increased the proportion of aromatic carbon structure in the dark-brown residue. The addition of glycine promoted the formation of humic-like acid (HLA), and higher glycine concentrations were more effective in increasing HLA formation.

Summary: Steam explosion (SE) pretreatment of wheat bran is effective in hydrolyzing cellulose, improving enzymatic digestion and solvent accessibility, which benefits soy sauce production. Under 1.5 MPa pressure, significant reductions in cellulose, hemicellulose, and lignin content were observed, leading to an intense increase in flavor determined by electronic nose analysis and sensory evaluation.
