Serbian, Croatian and Spanish consumers' beliefs towards artisan cheese

Summary: This study investigated beliefs towards artisan cheeses among participants from Serbia, Croatia and Spain, identifying four consumer profiles through cluster analysis. Findings showed that participants from different countries had different preferences for cheese types and consumption habits, but all valued artisan cheeses over industrial cheeses in terms of healthiness and quality. Participants also expressed the need for improvements in packaging, branding, assortment and availability of artisan cheeses.

DNA-based qualitative and quantitative identification of bovine whey powder in goat dairy products

Summary: This study explores qualitative and quantitative methods based on DNA to identify adulteration of bovine whey powder in goat dairy products. The results show that real-time PCR is more sensitive than conventional PCR in detecting bovine whey powder. This research provides a realistic and effective method for qualitative and quantitative identification of bovine whey powder in goat dairy products.
