Paying for sustainable food choices: The role of environmental considerations in consumer valuation of insect-based foods

Few studies have explored consumer attitudes towards insect-based foods (IBFs) in the UK. This paper profiles UK consumers' beliefs and attitudes towards IBFs, and examines the impact of environmental information on their valuation of IBFs.

Plant-based and cultivated meat in the United States: A review and research agenda through the lens of socio-technical transitions

These products provide opportunities to address various socio-environmental challenges, but also bring about significant challenges that need careful analysis. This paper reviews the literature on alternative proteins from a socio-technical transitions perspective and identifies gaps and research questions, highlighting the importance of public investment, open research, strategic funding, regulation advancement, business model innovation, and learning from social movements and fringe stakeholders.
