The effects of camel chymosin and Withania coagulans extract on camel and bovine milk cheeses

Summary: The study showed that using 36 mu g/L of W. coagulans, 50 IMCU/L of camel chymosin, 4 h holding time, and 60 degrees C incubation temperature provided the optimal textural hardness for both camel and bovine milk cheeses. Seven treatments were analyzed for physicochemical properties, yield, and SDS-PAGEitation. The results indicated that pure Withania extract resulted in lower coagulating effect, yielding cheeses with low yield, hardness, fat, protein, and total solids.
