Summary: The gut microbiota is a diverse community of microbes that plays a crucial role in maintaining overall health and preventing diseases. Disruption of the balance of the gut microbiota can occur due to various reasons, leading to dysbiosis. Dysbiosis of the gut microbiota can have detrimental effects on gastrointestinal health and contribute to the development of diseases such as irritable bowel syndrome and inflammatory bowel disease. This review suggests that biotherapy, using probiotic products, can help restore the disrupted gut microbiota and alleviate inflammation, potentially preventing the induction of cancer as well.

An alternative plant-based fermented milk with kefir culture using apricot (Prunus armeniaca L.) seed extract: Changes in texture, volatiles and bioactivity during storage

Summary: The aim of this study was to produce kefir from apricot seed extract (ASE) as an alternative dairy food for vegans and lactose-intolerant people, and to examine its effects on the physicochemical and sensory properties of kefir. The results showed that the addition of ASE to kefir led to changes in its color, viscosity, firmness, consistency, and TPA values. ASE also increased the ACE-i and antioxidant activities of kefir, and altered the levels of individual free amino acids. In addition, the presence of ASE promoted the growth of yeasts, lactobacilli, and lactococci in kefir. Qualitative and quantitative differences were observed in the volatile composition of kefir with ASE, but all samples received acceptable sensory scores during storage. In conclusion, ASE can be used to formulate fermented dairy products, or as an ingredient in plant-based fermented non-dairy beverages.
