Summary: Bioactive peptides are biomolecules derived from proteins with different bioactivities, which are encrypted in the parental protein and need to be released to show their bioactivity. Enzymatic hydrolysis and microbial fermentation are highly favorable methods for releasing bioactive peptides.

Whey Utilisation: Sustainable Uses and Environmental Approach

Elizabeta Zandona et al.

Summary: The dairy industry produces a large amount of whey as a by- or co-product with high organic matter content, causing significant environmental issues. In recent decades, efforts have been made to convert unwanted whey products into valuable raw materials for biotechnological and food applications. Sustainable whey management focuses on producing value-added products such as whey powders, proteins, functional foods, bioplastics, biofuels, etc. through new refining methods and integrated processes.

Comparison of alcalase- and pepsin-treated oilseed protein hydrolysates - Experimental validation of predicted antioxidant, antihypertensive and antidiabetic properties

Ruixian Han et al.

Summary: Emerging evidence suggests the importance of food-derived bioactive peptides for human health. Oilseed proteins, particularly low molecular weight fractions, show potential as affordable and sustainable sources of bioactive peptides with antioxidant, antihypertensive, and antidiabetic capabilities. While there were limited correlations between in silico predictions and in vitro experimental results, oilseed proteins may serve as suitable replacers for dairy proteins in the development of functional foods.
