Results showed that the nanoemulsion had higher antimicrobial activity and major components included anethole, naringenin, and taxifolin. The average droplet size of the nanoemulsion was around 400 nm, and it performed better than bulk extract against some foodborne pathogenic bacteria.

Data on the nephrotoxicity of European plant species are limited, highlighting the need for improved pharmacovigilance of herbal medicine, especially in patients with chronic kidney diseases.

Sarcocornia perennis: A Salt Substitute in Savory Snacks

Summary: Incorporating Sarcocornia perennis into crackers can enhance the crispiness of the crackers and improve the nutritional profile and antioxidant activity of the snack, with high levels of potassium, magnesium, and phosphorus. Crackers with 5% S. perennis content were well accepted by panelists and should be considered the maximum acceptable level of incorporation. By substituting 1% NaCl with an equal amount of S. perennis, a 70% reduction in sodium content can be achieved, making a significant contribution to reducing overall salt intake in the diet.

Antioxidant and Antidiabetic Activity of Proanthocyanidins from Fagopyrum dibotrys

Summary: This study identified the rhizome of Fagopyrum dibotrys as a rich source of proanthocyanidins with high antioxidant and antidiabetic activities. The purified proanthocyanidins showed better antidiabetic activity compared to grape seed proanthocyanidins. The detailed structural analysis revealed the presence of 72 proanthocyanidins with catechin and epicatechin as the dominant monomers. These findings suggest the potential development of F. dibotrys proanthocyanidins as antioxidant and hypoglycemic products.
