Comprehensive analysis of carotenoids constituents in purple-coloured leaves and carotenoid-derived aroma differences after processing into green, black, and white tea

Summary: This study accurately quantified 3 carotenes and 16 xanthophylls in 15 tea cultivars with leaves of different colors. The tea processing decreased the tea carotenoids by more than 65%, promoting the production of volatile apocarotenoids. Purple tea products were found to contain 25 crucial carotenoid-derived aroma compounds, with alpha/beta-ionone and their derivatives and dihydroactinidiolide accounting for more than 50% of total volatiles, contributing to the fruity aroma in purple tea products.

A comprehensive study of the differences in protein expression and chemical constituents in tea leaves (Camellia sinensis var. sinensis) with different maturity using a combined proteomics and metabolomics method

Summary: The maturity of tea leaves affects the quality and price of tea. This study used a combined proteomics and metabolomics analysis to explore the differences in protein expression and metabolites in tea leaves at different maturity levels. The results showed significant differences in nonvolatile components related to various metabolic pathways. Bud leaves had higher levels of enzymes related to the biosynthesis of important compounds, resulting in higher levels of these compounds compared to leaves. The first leaf had higher levels of a specific enzyme, leading to higher levels of a specific compound.

Summary: This study investigated the chemical characteristics of Jianghua Kucha (JHKC), a special tea germplasm in China, and found that it mainly contains high levels of purine alkaloids and methylated flavanols, as well as low levels of flavonol glycosides. Caffeine metabolism, flavonoid biosynthesis, and flavonol and flavone biosynthesis were identified as the most differential metabolic pathways. JHKC can be a valuable resource for breeding tea cultivars with high contents of theacrine, non-epi-form flavanols, and methylated flavanols.

Neuroprotective Effect of Gallocatechin Gallate on Glutamate-Induced Oxidative Stress in Hippocampal HT22 Cells
