An Endemic Plant of the Mediterranean Area: Phytochemical Characterization of Strawberry Tree (Arbutus unedo L.) Fruits Extracts at Different Ripening Stages

Summary: This study focused on the extraction, quantification, and characterization of bioactive compounds from Arbutus unedo L. fruits in different ripening states. Results showed that ultrasound-assisted extraction performed better than maceration extraction, and ethanol-water mixture extracts had a positive effect on the content of total phenolic compounds. The chemical profile of the extracts depended on the degree of fruit ripeness. The findings suggest that A. unedo fruits may have significant applications in the food and nutraceutical industry.
