Optimization of Soybean Protein Extraction Using By-Products from NaCl Electrolysis as an Application of the Industrial Symbiosis Concept

Summary: In this study, defatted soybean flour and sodium hydroxide were used to produce soy protein isolate (SPI) in order to achieve industrial symbiosis. By optimizing temperature, alkaline solution, and time used for SPI extraction through experimental design and surface response analysis, the obtained SPI was characterized and showed similar content and structure to commercial SPI. It was found to have good functional properties for food applications.
