Increasing the stability of Empeltre olive oils by aromatization with rosemary (Rosmarinus officinalis) and garlic (Allium sativum)

Maria Abenoza et al.

Summary: Adding garlic and rosemary during processing can enhance the antioxidant capacity and oxidative stability of Empeltre olive oils. Co-processing with rosemary during malaxation is more effective in increasing antioxidant compounds compared to maceration method. Garlic aromatized Empeltre olive oils achieved better sensory acceptance and scores than rosemary aromatized ones.

Hepatoprotective potential of Rosmarinus officinalis essential oil against hexavalent chromium-induced hematotoxicity, biochemical, histological, and immunohistochemical changes in male rats

Fatma M. El-Demerdash et al.

Summary: The study found that exposure to hexavalent chromium led to significant changes in hematological parameters, oxidative stress markers, and glutathione content in rats. Enzymatic antioxidants, liver enzymes, alkaline phosphatase activities, and protein levels were all adversely affected. However, administration of rosemary essential oil helped restore these parameters and improved antioxidant status, demonstrating its effectiveness in modulating hexavalent chromium-induced hepatotoxicity.

Oxidative stability of chia seed oil and flax seed oil and impact of rosemary (Rosmarinus officinalis L.) and garlic (Allium cepa L.) extracts on the prevention of lipid oxidation

Hyojik Jung et al.

Summary: The study found that rosemary extract provided higher oxidative stability in functional oils compared to garlic extract, retaining important nutritional components. After accelerated storage, the content of major odor-active volatiles varied depending on the type of oil. This research highlights the potential of natural aromatic plant extracts in improving the oxidative stability of functional oils.

Characterization of Olive Oils Obtained from Minor Accessions in Calabria (Southern Italy)

Amalia Piscopo et al.

Summary: The valorization of minor accessions of olive is potentially a good way to improve the qualitative production of a specific territory. Good quality in terms of free acidity, peroxides, spectrophotometric indexes, and fatty acid composition was observed in olive oils produced at both drupe harvesting times, except for those of Tonda di Filogaso which exceeded the legal limit for extra virgin olive oil in the second harvesting time.
