Ciabatta Bread Incorporating Goji (Lycium barbarum L.): A New Potential Functional Product with Impact on Human Health

Vincenzo Sicari et al.

Summary: This study investigated the phytochemical content and bioactivity of Lycium barbarum collected in Calabria and evaluated the possibility of enriching traditional ciabatta bread with goji fresh flesh puree. The enriched bread showed good levels of bioactive compounds and exhibited antioxidant and inhibitory activities against metabolic enzymes. Sensory analysis confirmed the slight modification in appearance but not in flavor and taste of the bread.

Investigation of using possibility of grape pomace in wafer sheet for wheat flour substitution

Emir Altinok et al.

Summary: This study used grape pomace as a replacement for wheat flour in wafer sheets, finding that high concentrations of grape pomace significantly affected the texture of the sheets and flow behavior of the batter. However, moisture content did not change significantly. The addition of grape pomace resulted in darker wafers and increased bioaccessibility of total phenolic compounds under simulated in vitro digestion conditions. Only smoothness and crispness were significantly affected by the addition of grape pomace.

Changes in Antioxidant Properties and Amounts of Bioactive Compounds during Simulated In Vitro Digestion of Wheat Bread Enriched with Plant Extracts

Anna Czubaszek et al.

Summary: The study found that adding stabilized plant extracts can significantly increase the antioxidant activity of wheat bread, and the antioxidant activity during in vitro digestion depends on the type of extract and the analytical method used. In addition, some compounds show greater stability during the digestion process, such as procyanidins and isoflavones.

Volatile Organic Compounds in Breads Prepared with Different Sourdoughs

Lucia De Luca et al.

Summary: This study used different types of sourdough to prepare bread and evaluated the physicochemical parameters of both the bread and sourdough. It was found that sourdough contained significant amounts of lactic, acetic, and succinic acids, with lactic acid being the predominant component in bread. Additionally, volatile organic compounds such as alcohols, aldehydes, and acetic acid were identified in the bread samples.
