Novel popping through infrared: Effect on some physicochemical properties of popcorn (Zea Mays L. var. Everta)

Chemical Composition and Antioxidant Profile of Sorghum (Sorghum bicolor (L.) Moench) and Pearl Millet (Pennisetum glaucum (L.) R.Br.) Grains Cultivated in the Far-North Region of Cameroon

Summary: This study evaluated the chemical composition and antioxidant profiles of four sorghum and two pearl millet grains grown in the Far-North region of Cameroon. The results showed that pearl millet had higher nutrient contents and antioxidant activity. Red sorghum exhibited the highest phenolic compound content and antioxidant activity. Mouri pearl millet and red sorghum were identified as the best sources of nutrients and bioactive compounds, respectively.
