Optimization of spray drying process for recovery of onion-stevia leaf hot water extract powder using response surface methodology

Summary: Optimizing the drying process, drying aid concentration, and inlet air temperature is crucial for obtaining high-quality products. Onion-stevia leaf hot extract powders were prepared using gum arabic (GA) and whey protein concentrate (WPC). The study found that a higher glass transition temperature and better sensory properties were achieved with GA as the carrier. The optimized conditions for GA and WPC powders were different, and GA was determined to be a superior carrier for producing spray-dried onion-stevia powder.

Experimental analysis of spray drying in a process intensified counter flow dryer

Microencapsulation of roselle (Hibiscus sabdariffa L.) anthocyanins: Effects of different carriers on selected physicochemical properties and antioxidant activities of spray-dried and freeze-dried powder

Summary: This study investigated the microencapsulation of anthocyanins from hibiscus calyces using different drying techniques and carriers. The results showed that konjac glucomannan (KON) was the most effective carrier in terms of retaining the antioxidant activity of anthocyanins during drying. However, it had the lowest encapsulation efficiency. In contrast, maltodextrin and gum Arabic were identified as more effective carriers, providing higher encapsulation efficiency for anthocyanins. The moisture content of spray-dried powder samples was significantly higher than that of freeze-dried powders, and the solubility of all samples was above 94.1%.

Optimization of spray drying parameters for encapsulation of Nettle (Urtica dioica L.) extract
