Effects of lactic acid bacteria fermentation on the phytochemicals content, taste and aroma of blended edible rose and shiitake beverage

Summary: In this study, five commercial lactic acid bacteria (LAB) strains were selected and used for fermentation of blended edible rose and shiitake beverage. The results showed that all strains reached high viable counts and the fermented samples exhibited higher contents of various bioactive compounds and stronger antioxidant capacity compared to the control. The electronic tongue analysis demonstrated that LAB fermentation improved the taste profiles of the fermented samples by reducing bitterness, astringency, and aftertastes. Furthermore, LAB fermentation enriched the aroma complex of the beverage and resulted in the formation of new volatile compounds.

Summary: The application of lactic acid bacteria fermentation can modify the functional characteristics and phytochemical content of probiotic beverages. This study evaluated the effect of different Lactobacillus strains on the phenolic contents, flavonoid contents, and antioxidant capacities of quinoa. Fermentation increased the free phenolic and flavonoid contents, while decreasing the bound phenolic and flavonoid contents. Overall, L. acidophilus NCIB1899 showed the highest fermentation capacity for quinoa.

Untargeted metabolomics were also performed to analyze the changes in metabolites during fermentation.

Volatile and non-volatile profiles in jujube pulp co-fermented with lactic acid bacteria

Significant increases in acids and alcohols were observed before 12-hour fermentation, along with changes in active aromas after fermentation. Investigation of the possibility of fermentation of red grape juice and rice flour by Lactobacillus plantarum and Lactobacillus casei

Summary: The aim of this study was to evaluate bacteria growth and substrate metabolism during the fermentation of red grape juice and a mixture of red grape juice and rice flour solution using Lactobacillus plantarum and Lactobacillus casei. Results showed that fermentation with a mixed culture of both bacteria increased acidity and microbial population, with the most lactic acid production occurring in the mixture. Additionally, the mixture of L. plantarum and L. casei showed the highest sugar consumption, indicating it can be a suitable substrate for lactic acid production.
