Structure, chemical stability and antioxidant activity of melanoidins extracted from dark beer by acetone precipitation and macroporous resin adsorption

Summary: Melanoidins contribute to the sensory and functional properties of dark beers. The structure, stability, and antioxidant activity of acetone precipitation extracted melanoidins (APE-M) and macroporous resin adsorption extracted melanoidins (MAE-M) from dark beer were studied. MAE-M showed more sophisticated structures and higher antioxidant activity compared to APE-M, indicating that MAE was more effective in extracting melanoidins while maintaining their accurate structure and profitable antioxidant activity.

Improvement of S-allyl-L-cysteine content, probiotic properties and constipation prevention effect of black garlic by the lactic acid bacteria fermentation

Summary: In this study, lactic acid bacteria strains isolated from the brine of stinky tofu were used to ferment black garlic. The fermentation significantly increased the S-allyl-L-cysteine (SAC) content and antioxidant activities of black garlic. It also showed antimicrobial activity against Helicobacter pylori. Lactiplantibacillus plantarum X7022 was identified as a prospective starter for black garlic fermentation, and the fermented black garlic demonstrated preventive effects on loperamide-induced constipation.

Dietary Melanoidins from Biscuits and Bread Crust Alter the Structure and Short-Chain Fatty Acid Production of Human Gut Microbiota

Summary: In this study, the impact of melanoidins extracted from biscuits or bread crust on the human gut microbiota was assessed using a three-stage Human Gut Simulator system. Results showed that the addition of melanoidins led to significant changes in microbial community composition, with greater effects observed for biscuit melanoidins. Furthermore, the presence of lipid components in biscuit melanoidin structures may contribute to these differences. Melanoidins, being resistant to degradation by gastrointestinal enzymes, provide an additional source of nutrition for gut microbes.

The results suggest that inosine pretreatment has the potential for preventing LPS-induced acute liver damage through its regulatory effects on both intestinal microbiota and hepatic signaling pathways.
