Flavor release from traditional dry-cured pork during oral processing

Materials Properties, Oral Processing, and Sensory Analysis of Eating Meat and Meat Analogs

However, limited studies have been conducted on meat analogs, making it difficult to determine the control parameters for oral processing and sensory perception. The texture of these analogs depends on multiple factors and requires a holistic approach for study. This article discusses the differences in mastication and disintegration between meat and meat analogs, as well as the potential to convert skeptical consumers into returning customers.

Dynamic release and perception of key odorants in grilled eel during chewing

Summary: This study used atmospheric pressure chemical ionization mass spectrometry to monitor in real-time the key odorants released from grilled eel during mastication. The results showed that the release and perception of odorants during mastication can be divided into three distinct phases, and recommended extending the chewing period and increasing the chewing frequency to optimize the consumer experience.

Retronasal Aroma of Beef Pate Analyzed by a Chewing Simulator

Summary: This study examined the relationship between retronasal aroma and food deliciousness. It found that stronger chewing force, higher fat content in the sample, and partial substitution of beef proteins with soy proteins all increased the release intensity of aroma compounds. Linking oral processing behavior to bolus properties and dynamic sensory perception of processed cheeses with bell pepper pieces

Summary: This study investigated the effects of adding bell pepper gel pieces to processed cream cheese matrices on oral behavior, bolus properties, and sensory perception. The results showed that the physical-chemical properties of the heterogeneous foods can influence consumption time, eating rate, bolus properties, and dominance of sensory perception. Increasing the fracture stress and concentration of bell pepper gel pieces led to changes in oral behavior and sensory perception.
