Shelf Life and Safety of Vacuum Packed HPP-Treated Soaked Cod Fillets: Effects of Salt Content and Multilayer Plastic Film

Gianluigi Ferri et al.

Summary: High microbiological quality, food safety, and environmental sustainability are important in food production. This study investigated the possibility of reducing salt content during transportation and evaluated the use of new recyclable multilayer plastic film packaging for salted fish products. The results showed that the new packaging, in combination with high pressure processing technologies, can provide safe food matrices.

Effects of high hydrostatic pressure (HHP) and storage temperature on bacterial counts, color change, fatty acids and non-volatile taste active compounds of oysters (Crassostrea ariakensis)

Chunsheng Liu et al.

Summary: High hydrostatic pressure treatment significantly affects the bacterial counts, color, fatty acids and flavor of oysters, while storage temperature also plays a role. Storage at -20 degrees Celsius can effectively inhibit microbial growth, and high pressure treatment leads to noticeable improvements in color.

Application of high-pressure assisted thermal processing (PATP) at pilot scale for replacing conventional maturation and thermal cooking in whiteleg shrimp (Litopenaeus vannamei)

Eduardo Puertolas et al.

Summary: This study examined the use of high-pressure assisted thermal processing (PATP) for shrimp maturation and cooking. PATP treatments at 100-350 MPa improved peelability and maintained similar quality properties compared to conventional methods, while higher pressure (600 MPa) resulted in overprocessing and decreased quality.

Analysis of Alternative Shelf Life-Extending Protocols and Their Effect on the Preservation of Seafood Products

Lourenco Pinto de Rezende et al.

Summary: Seafood is highly nutritious but perishable, leading to financial losses and quality concerns. The demand for healthy products requires the development of alternative methods to extend the shelf life of seafood. This review focuses on techniques such as biodegradable films, superchilling, irradiation, high-pressure processing, hyperbaric storage, and biopreservation to preserve seafood. While these methods inhibit bacterial proliferation and decay, they may also have sensory impacts.

High Hydrostatic Pressure Treatment of Oysters (Crassostrea gigas)-Impact on Physicochemical Properties, Texture Parameters, and Volatile Flavor Compounds

Yuyang Ma et al.

Summary: The study found that HHP treatment improved the water content and texture parameters of oysters, adjusted the fatty acid content, and enhanced the volatile flavor compounds, reducing fishiness and positively impacting on the edible qualities.

Comparison of biochemical composition and non-volatile taste active compounds in raw, high hydrostatic pressure-treated and steamed oysters Crassostrea hongkongensis

Chunsheng Liu et al.

Summary: The effects of high hydrostatic pressure and steam on the biochemical composition and nonvolatile taste active compounds of oysters were investigated. The study found changes in moisture content, fatty acid composition, and taste active compounds in oysters under different treatments, with HHP treatment having a relatively smaller impact compared to steam processing.

Effect of High-Pressure Processing on Physico-Chemical, Microbiological and Sensory Traits in Fresh Fish Fillets (Salmo salar and Pleuronectes platessa)

Marta Castrica et al.

Summary: High-pressure treatment shows significant advantages in extending the shelf life of fish and seafood, particularly in inhibiting microbial growth and maintaining odor stability. Sensory analysis reveals higher scores for samples treated with high pressure, but there are noticeable effects on texture and appearance.
