Novel insight into physicochemical and flavor formation in naturally fermented tilapia sausage based on microbial metabolic network

Summary: The quality and flavor of fermented tilapia sausage are determined by the complex metabolism of microbial community. Physicochemical characteristics, volatile compounds, and microbial communities were studied during the fermentation process, showing significant enhancement in physical indexes, flavor amino acids, and volatile flavor compounds after fermentation. Lactococcus, Pediococcus, Enterococcus, and Lactobacillus played key roles in physicochemical and flavor characteristics formation, while biogenic amines accumulation was linked to the metabolism of Enterococcus, Enterobacter, and Citrobacter. Further research on isolation of lactic acid bacteria may improve the quality of fermented tilapia sausage.

Knockout mutants showed smaller lesions and colonies, delayed conidial germination, but produced more macroconidia compared to complement mutants and wild type strains.
