Risk management tool to define a corrective storage to enhance Salmonella inactivation in dry fermented sausages

Summary: This study aimed to model the behavior of Salmonella in acid and low-acid DFS as a function of water activity and storage temperature. The results showed a significant decrease in Salmonella levels during storage under all tested conditions, with water activity and temperature both playing a significant role. The developed models proved to be a reliable risk management tool for manufacturers to design storage strategies to enhance Salmonella inactivation in DFS products before market release.
