Transcriptomic and metabolic analyses reveal differences in monoterpene profiles and the underlying molecular mechanisms in six grape varieties with different flavors

Summary: Monoterpenes are important in determining the floral and fruity aromas of grapes. This study investigated the content and transcriptome profiles of free and bound monoterpene compounds in six different grape varieties using advanced analytical techniques. The results showed significant differences in the monoterpene profiles of grape varieties with different aroma types. Certain monoterpenes were found to be dominant in specific varieties, and their accumulation was associated with the expression of certain genes involved in monoterpene biosynthesis. This study provides insights into the accumulation of monoterpenes in grapes and the underlying molecular mechanisms.

Microcapsules of Shrimp Oil Using Kidney Bean Protein Isolate and κ-Carrageenan as Wall Materials with the Aid of Ultrasonication or High-Pressure Microfluidization: Characteristics and Oxidative Stability

Summary: Shrimp oil was successfully encapsulated in microcapsules consisting of red kidney bean protein isolate and kappa-carrageenan using ultrasonication and high-pressure microfluidization. The microcapsules exhibited moderate to high encapsulation efficiency and good flowability. The size, shape, and surface of the microcapsules were influenced by the ratio of wall material to shrimp oil and the emulsification method. Encapsulation of shrimp oil in the microcapsules provided superior protection against oxidative deterioration, resulting in higher retention of polyunsaturated fatty acids and astaxanthin during storage at room temperature.
