Comparative study of the functional compounds and antioxidant properties of different cowpea (Vigna unguiculata) leaf cultivars after in vitro digestion

Faith Seke et al.

Summary: This study investigated the influence of in vitro digestion on the carotenoids, antioxidant, and antidiabetic capacity of three cowpea cultivars. The results showed that VOP1 had the highest bioaccessibility of 9-cis-beta-carotene, while VOP3 and VOP4 had the highest bioaccessibility of all-trans beta-carotene and lutein/zeaxanthin, respectively. The antioxidant and antidiabetic effects decreased during the small intestinal phase. The cowpea cultivars demonstrated a high ability to meet the recommended daily allowance for carotenoids, indicating the potential use of cowpea leaves as functional ingredients.

Influence of fermentation with different lactic acid bacteria and in vitro digestion on the change of phenolic compounds in fermented kiwifruit pulps

Xiao Chen et al.

Summary: The study demonstrated that fermentation with different Lactobacillus strains could enhance the bioactive compounds, antioxidant capacity, and phenolic profiles of kiwifruit pulps. Furthermore, Lactobacillus plantarum fermentation showed better retention of antioxidants and viable count during digestion compared to Lactobacillus acidophilus. Overall, Lactobacillus plantarum was found to be more suitable for fermenting kiwifruit pulp compared to Lactobacillus acidophilus and Lactobacillus casei.

Evaluation of transport mechanism of ascorbic acid through cyclic peptide-based nanotubes: A molecular dynamics study

Farzane Abasi Joozdani et al.

Summary: This study investigates the transport behavior of L-ascorbic acid in two cyclic peptide nanotubes (CPNTs) through computational studies. The findings reveal differences in the movement of ascorbic acid in the two nanotubes and the number of hydrogen bonds formed with water molecules and CPNTs. The results provide useful information for future applications and studies in the field of nanoscience and nanotechnology, such as drug delivery and nanosensors.

Effect of fermentation of chosen vegetables on the nutrient, mineral, and biocomponent profile in human and animal nutrition

Piotr Kiczorowski et al.

Summary: This study found that the fermentation process can reduce water content and increase fat content in vegetables, but it also decreases the levels of vitamin C and phenols. Fermented carrots and peppers have increased vitamin A and carotene content compared to raw vegetables. Broccoli, peppers, and red beet have the highest levels of analyzed nutrients and bioconstituents.

Impact of Simulated Gastrointestinal Conditions on Antiglycoxidant and α-Glucosidase Inhibition Capacities of Cyanidin-3-O-Glucoside

Didier Fraisse et al.

Summary: The study found that cyanidin-3-O-glucoside has poor stability under intestinal conditions, but shows persistent antioxidant and antiglycation effects, and even inhibits alpha-glucosidase activity in the intestinal phase. This suggests that classical in vitro evaluations may underestimate its potential for managing diabetes.
