Summary: Mixed fermentation using yeast, lactic acid bacteria, and acetic acid bacteria was found to protect the color of Chinese bayberry pomace beverage and slow down the degradation of anthocyanins. Enzymes, however, could seriously damage the color and exacerbate anthocyanin degradation. Mixed fermentation also promoted the conversion of flavonoids into flavonol aglycones.
