Comparison and Optimization of Different Extraction Methods of Bound Phenolics from Jizi439 Black Wheat Bran

Oat phenolic compounds regulate metabolic syndrome in high fat diet-fed mice via gut microbiota

Summary: Chia seeds were subjected to solid-state fermentation using Trichoderma reesei to enhance the production of phenolic compounds and fungal phenolic-associated enzymes. The optimal fermentation conditions were determined to be 28 degrees C, pH 7.0, 20% moisture, and 7-day fermentation. The fermented chia seeds showed significantly increased phenolic content and antioxidant activity. The study suggests that fermented chia seeds have potential applications in nutrition and medicine.

Summary: Our study investigated the effect of different enzymes on the release of phenolic compounds from spelt seeds, and demonstrated the synergistic effect of enzymatic treatment, germination, and fermentation on the phenolic content and antioxidant activities of spelt. Enzymatic treatment successfully released bound phenolics, and combining enzymatic treatment with germination or fermentation increased the extractable phenolic content. Enzymatic treatment of raw seeds showed lower intracellular oxidation but higher uptake of hydroxycinnamic acids compared to the extractable fraction.

The powders also showed good functional properties, antioxidant capacity, antimicrobial activity, and biological safety, demonstrating their potential as multifunctional ingredients in the food industry.
