Volatile and non-volatile profiles in jujube pulp co-fermented with lactic acid bacteria

Significant increases in acids and alcohols were observed before 12-hour fermentation, along with changes in active aromas after fermentation. Summary: The effects of heat shock (HT), 1-methylcyclopropene (1-MCP), or their combination (HT + 1-MCP) on jujube fruits during cold storage were studied. HT showed the best preservation effect on jujube fruits by inhibiting red index increase, decay incidence, and weight loss, delaying firmness, SSC, TA, and AsA decrease, and maintaining the integrity of cell membrane and high activity of active oxygen scavenging enzymes. The study concluded that postharvest HT treatment effectively delayed the senescence and decay of jujube fruits.
