The Reduction of Salt in Different Cheese Categories: Recent Advances and Future Challenges

Summary: Public awareness about excessive sodium intake necessitates the reevaluation of composition and processing methods for high sodium foods in the food industry. Reducing salt content in cheese poses challenges due to the various functions of sodium chloride in cheese manufacturing and ripening. Targeted strategies are needed to maintain the quality and safety of different cheese categories when decreasing sodium content.
