Cocoa based beverages - Composition, nutritional value, processing, quality problems and new perspectives

Summary: This paper reviews different aspects of cocoa beverage production and quality, including instant and ready-to-drink beverages, additives to improve quality characteristics, alternative processing techniques, and problems that may arise during production. The subject of cocoa-based beverages is still relatively under-researched, and further efforts should be made to design beverages with reduced sugar content and enriched with bioactive compounds. Alternative processing techniques and increasing bioaccessibility of micro- and macroelements are also important areas for further investigation.

Summary: This study optimized the extraction of phenolic compounds from tiger nut by-products using ultrasound technology. The phenolic profile of two tiger nut by-products, one with Protected Designation of Origin (PDO) and another without (n-PDO), were compared. The PDO by-product was found to have higher amounts of phenolic acids and other polyphenols, as well as greater antioxidant activity, while the n-PDO by-product had higher levels of phenol precursors.

This study optimized the extraction of phenolic compounds from yellow peppers using ultrasound-assisted extraction (UAE) and analyzed the extracted compounds. The results showed that different parts of the pepper have different content of substances and antioxidant activities.

Influence of cocoa origin on the nutritional characterization of chocolate

Summary: Over the past few years, there has been a growing demand for premium or specialty chocolates, which include single-origin chocolates made exclusively from cocoa beans sourced from specific regions, known for their distinct chemical profiles. A comparative study was conducted on dark chocolates made with cocoa from Brazil, Cuba, Madagascar, Mexico, Dominican Republic, Sao Tome, and Venezuela. The study analyzed the nutritional profile, bioactive compounds, mineral composition, organic acids, and methylxanthines. The findings showed a significant influence of geographical origin on the chemical profiles of the chocolates.
