Genetic Parameters for Growth, Ultrasound and Carcass Traits in New Zealand Beef Cattle and Their Correlations with Maternal Performance

Franziska Weik et al.

Summary: The profitability of the beef industry depends on the performance of both finishing cattle and the breeding herd. This study examines the inheritance of growth, ultrasound, and carcass traits in finishing beef cattle and their correlations with maternal performance traits. Results show that genetic variation exists in finishing animals, allowing for direct selection of enhanced growth, ultrasound, and carcass traits. Ultrasound scan traits are highly genetically correlated with corresponding traits measured at slaughter. Fat content in finishing cattle is positively correlated with rebreeding performance and negatively correlated with mature cow live weight. However, the correlation between genetic merit for carcass fat traits and body condition in mature cows is low.

Fatty Acid Composition of Grain- and Grass-Fed Beef and Their Nutritional Value and Health Implication

Kim Margarette C. Nogoy et al.

Summary: This review compares the fatty acid composition of beef from grass-fed and grain-fed cattle, highlighting that grass-fed beef has lower total fat content and more favorable fatty acid profile. Additionally, grass-fed beef contains higher levels of essential fatty acids and omega-3 polyunsaturated fatty acids, potentially offering more health benefits than grain-fed beef.

Breed dependent regulatory mechanisms of beneficial and non-beneficial fatty acid profiles in subcutaneous adipose tissue in cattle with divergent feed efficiency

Mi Zhou et al.

Summary: This study aimed to investigate the effect of breed and feed efficiency on the molecular mechanisms regulating fatty acid profiles in subcutaneous adipose tissue of beef steers. The results showed that there were significant differences in fatty acid profiles between different breeds and feed efficiency groups. The expression of certain genes and the upstream regulator SREBF1 were found to be associated with the fatty acid composition in KC steers. These findings suggest that genetic selection of meat with higher healthy fatty acid index in beef cattle may involve key genes and regulators related to fatty acid metabolism.

Genetic and Environmental Determinants of Beef Quality-A Review

Tomasz Sakowski et al.

Summary: The rearing and feeding strategy of cattle for slaughter plays a crucial role in the quality and fatty acid profile of beef. Reducing saturated fatty acid content and increasing polyunsaturated and monounsaturated fatty acid levels are important for human health and to prevent diseases associated with dietary fat.

Comparison of Pure and Crossbred Japanese Black Steers in Growth Performance and Metabolic Features from Birth to Slaughter at a Spanish Fattening Farm

Juan M. Vazquez-Mosquera et al.

Summary: Cattle growth is crucial for beef production. This study shows that purebred and crossbred Wagyu steers raised in Spain with high welfare standards and a local diet high in olein content exhibited appropriate growth and fattening rates. Wagyu and Wangus steers had similar growth rates, but purebred Wagyu may be more profitable.

Impact of Cattle Feeding Strategy on the Beef Metabolome

Juan Fernando Morales Gomez et al.

Summary: This study investigated the effects of different finishing systems and growth rates on the meat metabolome of animals. The results revealed distinct differences in meat metabolism caused by growth rate, particularly in energy metabolism and associated pathways. Additionally, the feeding system was found to alter protein and lipid metabolism.

Wagyu-Angus cross improves meat tenderness compared to Angus cattle but unaffected by mild protein restriction during late gestation

X. D. Liu et al.

Summary: The study demonstrated that offspring sired by Wagyu cattle showed superior beef quality characteristics such as higher marbling scores and quality grades compared to those sired by Angus cattle. Feeding mature grass hay-based diet with relatively low protein content during late gestation had no major effect on beef quality of subsequent cattle.

Genomic imprinting variances of beef carcass traits and physiochemical characteristics in Japanese Black cattle

Keiichi Inoue et al.

Summary: This study aimed to estimate variance components related to imprinting for carcass traits and physiochemical characteristics in Japanese Black cattle. It found that imprinting variances were mainly due to the maternal contribution, indicating the existence of maternally expressed genomic imprinting effects on the traits in Japanese Black cattle. Therefore, maternal gametic effects should be considered in breeding programs.

Perception of beef quality for Spanish and Brazilian consumers

Bruna Boito et al.

Summary: The study reveals that consumers in Spain and Brazil prioritize extrinsic factors when purchasing beef, but cultural differences lead to opposite concerns regarding beef freshness and tenderness. Consumers are increasingly seeking specific pre-purchase information and products with guaranteed superior quality.

Comparative Genome-Wide Alternative Splicing Analysis of Longissimus Dorsi Muscles Between Japanese Black (Wagyu) and Chinese Red Steppes Cattle

Xibi Fang et al.

Summary: This study investigated the differences in alternative splicing in longissimus dorsi muscle between Japanese black cattle (Wagyu) and Chinese Red Steppes, identifying novel candidates that may affect lipid metabolism and muscle development in beef cattle. RNA-seq analysis revealed altered splicing and expression levels of these genes, shedding light on the potential involvement of these genes in muscle development and fat deposition.

Summary: Oxidative stress and inflammation are important contributors to chronic non-communicable diseases. Different types of fatty acids have varying effects on chronic diseases, with moderate intake of Ω-6 fatty acids lowering the risk of cardiovascular diseases and Ω-3 fatty acids helping to reduce inflammation levels.
