Ultrasound-assisted extraction of functional compound from mulberry (Morus alba L.) leaf using response surface methodology and effect of microencapsulation by spray drying on quality of optimized extract

Supasit Insang et al.

Summary: This study optimized the ultrasound-assisted extraction condition of mulberry leaf extract (MLE) and microencapsulated MLE using spray drying. The results showed that the highest bioactive compound and antioxidant activity were obtained from MLE extracted at 60°C, 30 min and 60% v/v ethanol concentration. The microcapsules prepared with resistant maltodextrin showed the highest encapsulation yield and efficiency, and different coating materials affected the microstructures of the microcapsules.

Aronia Melanocarpa: Identification and Exploitation of Its Phenolic Components

Theodora Kaloudi et al.

Summary: The phenolic components of Aronia melanocarpa, including anthocyanins, phenolic acids, and flavonols, are selectively distributed in different parts of the fruit. The extraction of these components can be achieved by methanol extraction. Aronia juice, rich in polyphenols, can be obtained by mashing and centrifugation, while the residual pomace can be processed into a powder containing anthocyanins through water extraction and spray drying encapsulation.

Influence of Encapsulation Parameters on the Retention of Polyphenols in Blackthorn Flower Extract

Nikolina Gacina et al.

Summary: This study evaluated the encapsulation parameters of blackthorn flower extract during the spray-drying process. The type of wall material, its ratio to extract dry matter, and drying temperature were found to have significant effects on the concentration of polyphenolic compounds. The addition of 25% gum arabic in maltodextrin resulted in the highest concentrations of phenolic acids and flavonoids. Selected encapsulation parameters ensured a high retention rate of total phenolics, providing a polyphenol-rich product with great potential for application in the functional food and nutraceutical industry.
