Vacuum impregnation on apples with grape juice concentrate: Effects of pressure, processing time, and juice concentration

Summary: This study investigated the effects of pressure reduction, immersion time, and grape juice concentration on the impregnation parameters of apple cubes. The results showed that pressure reduction had a significant impact on mass transfer parameters, color parameters, and bioactive compounds. It was recommended to use specific conditions to achieve impregnation without considerable morphometric modification.

Summary: This study evaluates the effect of adding BCD and AA to FeGlu solution on the iron content and bioaccessibility in vacuum-cooked pumpkin discs. The results show that adding BCD and AA can increase the Fe2+ content in VCPD, improve the solubility and stability of iron, and preserve the color of the pumpkin discs.

Impact of Osmotic Dehydration With/Without Vacuum Pretreatment on Apple Slices Fortified With Hypertonic Fruit Juices

Summary: This study investigated the effects of concentrated fruit juices on mass transfer and enhancement of health-promoting properties of apple slices treated by an osmotic dehydration process. The results showed that apple chips treated with grape juice had higher phenol content and DPPH radical-scavenging activity compared to the control. The study also found that the osmotic pressure difference served as the driving force for mass transfer in the osmotic dehydration process. Therefore, concentrated fruit juices are effective osmotic solutions for producing colorful apple chips with enhanced health-promoting properties.

Development of Iron fortified potato fries through Vacuum assisted processing strategies

The resulting product, dried GSAVSF, showed improved nutritional content and quality compared to fresh GS, with acceptable color, microbial stability, and rehydration ratio. This energy-efficient and sustainable process produced a highly nutritious product that was well received by consumers.
