Classification of seven Iranian wheat varieties using texture features

Textural Properties of Bakery Products: A Review of Instrumental and Sensory Evaluation Studies

Development and quality evaluation of cookies supplemented with concentrated fiber powder from chiku (Manilkara zapota L.)

Summary: The study found that adding concentrated chiku fiber powder can significantly increase the dietary fiber, crude fiber, and antioxidant activity of cookies, but may decrease protein content and cookie hardness. The impact of 7% CChFP on the texture, taste, and aroma of cookies was minimal, and cookies supplemented with 7% CChFP achieved the highest overall acceptability score.

Summary: The study added dehydrated blackcurrant by-product to gluten-free chocolate cookies as a source of dietary fibre and antioxidants, resulting in increased phenolics and antioxidant activity in the cookies without affecting organoleptic properties. Physical and structural characteristics of starch-based and conventional cookies: Water sorption, mechanical glass transition, and texture properties of their crust and crumb

Summary: The physical properties and texture analysis of starch-based cookies were compared with conventional cookies, showing that the former had higher porosity and lower glass-transition temperature. However, the starch-based cookies had lower fracture force, distance, and energy in texture analysis than conventional cookies. These differences were attributed to the undeveloped gluten and fat contents in the starch-based cookies.

Through training models, designing texture clustering methods, extracting features, and conducting statistical analysis and classification, the research successfully achieved the grading and diagnosis of SHCC. The results showed that the grading scheme effectively reduced errors in texture analysis and may assist physicians in early diagnosis in clinical practice.
