Effects of microbial transglutaminase on the gelling property and in vitro digestibility of fish scale gelatin from grass carp

Strong fish gelatin hydrogels double crosslinked by transglutaminase and carrageenan

Summary: In this study, strong fish gelatin hydrogels were successfully prepared by double crosslinking gelatin with transglutaminase (TGase) and kappa-carrageenan, resulting in significantly improved mechanical properties and thermal stability. The highest gel strength, compression fracture stress, and storage modulus were achieved when the concentration of TGase was 20 U/g gelatin. The thermal stability of the double crosslinked gelatin hydrogels was attributed to the presence of covalent crosslinks. The effect of TGase concentration on the physical properties and microstructure of the double crosslinked hydrogels was analyzed, and the differences between double crosslinked gelatin hydrogels and gelatin hydrogels single crosslinked by TGase or carrageenan were systematically compared.

Ultrasound-triggered transglutaminase-catalyzed egg white-bovine gelatin composite hydrogel: Physicochemical and rheological studies

Summary: This study investigated the gel properties and secondary structures of egg white-bovine gelatin composite hydrogels with different mass ratios using ultrasound and transglutaminase pretreatment. The results showed that the hardness and storage modulus of the hydrogels increased with increased gelatin in proteins mass ratio and ultrasound duration. Fourier transform infrared spectroscopy revealed that helical structures dominated in the composite hydrogels. Microstructure investigations showed that hydrogels formed the most porous structures at 50E:50G and 40E:60G mass ratios.

The results demonstrate that TG modification can alter the behavior and properties of gelatins. TG-modified aquatic gelatin shows potential as a mammalian gelatin substitute.

Double-crosslinked effect of TGase and EGCG on myofibrillar proteins gel based on physicochemical properties and molecular docking

Preparation of high thermal stability gelatin emulsion and its application in 3D printing

Summary: Gelatin crosslinked by Transglutaminase was used to stabilize food-grade high internal phase emulsions (HIPEs) in a one-step method, resulting in uniform droplet diameter and good storage stability. The thermal and rheological properties of the HIPEs were enhanced with TG crosslinking, showing potential for 3D printing applications. This study provides an industrialized method for gelatin-based HIPEs with high thermal stability and theoretical guidance for practical applications.
