The microbial succession and their correlation with the dynamics of flavor compounds involved in the natural fermentation of suansun, a traditional Chinese fermented bamboo shoots

Qianqian Guan et al.

Summary: This study investigated the dynamic changes in physicochemical parameters, flavor compounds, and microbiota community during the natural production of Suansun. The results showed significant variations in physicochemical parameters and flavor compounds during the 30-day fermentation process. The microbial flora also underwent a transition from acid-sensitive genera to acid-resistant genus. Furthermore, the study identified four bacterial genera that played crucial roles in the unique flavor formation of Suansun.

Effect of harvest maturity on volatile compounds profiling and eating quality of hawthorn (Crataegus azarolus L.) fruit

Ahmet Dursun et al.

Summary: The study showed that the maturity stage of hawthorn fruit affects its quality characteristics, with firmness and titratable acidity decreasing as the fruit matures. Fruit size, edible fruit ratio, pH, and esters increase from immature to over mature stages. Fruit at mature and over mature stages are preferred by panelists due to their high levels of esters, resulting in a stronger fruit flavor compared to immature fruit.

Effect of lactic acid bacteria on mackerel (Pneumatophorus japonicus) seasoning quality and flavor during fermentation

Yueqi Zhou et al.

Summary: The study assessed the influence of lactic acid bacteria on the physicochemical characteristics of low-salt fermented mackerel seasonings, with a focus on key volatile compounds and their formation pathways. The flavor of LAB-fermented mackerel seasonings was found to be superior to traditional fish sauce, with specific strains of LAB impacting the formation of flavor substances. Analysis of key odor-active compounds and their correlations with sensory characteristics revealed compounds like (E)-2-nonenal and (E,E)-2,4-decadienal playing a role in overall odor profile.
