Prebiotic activities of dextran from Leuconostoc mesenteroides SPCL742 analyzed in the aspect of the human gut microbial ecosystem

Summary: This study investigated the prebiotic activities of LM742 dextran produced by Leuconostoc mesenteroides SPCL742 in the human gut microbial ecosystem. LM742 dextran showed resistance to digestive enzymes and promoted the symbiotic growth of beneficial bacteria and certain bacteria in the intestine. Additionally, LM742 dextran increased the concentration of short-chain fatty acids and inhibited the adhesion of pathogenic E. coli. These findings suggest that LM742 dextran has potential health benefits as a prebiotic polysaccharide in the human intestine.

Processing properties of yogurt as affected by the EPS produced by Leuconostoc mesenteroides XR1

Summary: This study examined the fermentation characteristics of a novel Leuconostoc mesenteroides strain XR1 and the effects of XR1 exopolysaccharides (EPS) on the microstructure, texture, and rheological properties of yogurt. Results showed that XR1 had good EPS production capacity and favorable fermentation performance. Adding XR1 EPS to fermented milk improved its water-holding capacity and changed its microstructure. The XR1 strain was found to be compatible, and the steric barrier formed between XR1 EPS and the milk proteins enhanced its viscoelastic properties. Rheology studies showed that fermented milk with added EPS had a higher modulus and complex viscosity. These findings suggest that XR1 EPS can serve as a natural organic additive to replace chemical additives in dairy products.

Characterisation and functional roles of a highly branched dextran produced by a bee pollen isolate Leuconostoc mesenteroides BI-20

Summary: This study isolated a lactic acid bacteria (LAB) strain capable of producing exopoly-saccharides (EPS) from bee pollen. The EPS produced by this strain, named BI-20, was determined to be a highly branched dextran with strong thermal properties, amorphous nature, and antioxidant capacity. Additionally, it was found that BI-20 was resistant to digestion under simulated gastric conditions.

The current taxonomy of this genus is based on outdated methods and needs to be reevaluated using whole genome-based approaches. However, the presence of antibiotic resistance genes in this important LAB genus raises concerns about their use in the industry.
