Characteristics of microbial communities in fermentation of pickled ginger and their correlation with its volatile flavors

Effects of Brines and Containers on Flavor Production of Chinese Pickled Chili Pepper (Capsicum frutescens L.) during Natural Fermentation

Summary: The effects of fresh or aged brine and pool or jar containers on the flavor characteristics of pickled chili peppers were investigated. The results showed that brine had a more dominant effect on organic acid, sugar, and aroma, while containers had a greater influence on free amino acid production. Chilies fermented with aged brine had higher acidity and sugar content, while chilies fermented in pool containers had higher free amino acid content. Overall, jar fermentation with aged brine resulted in a more flavorful pickled chili pepper.

Characteristics of changes in volatile organic compounds and microbial communities during the storage of pickles

Summary: In this study, the variations of volatile organic compounds (VOCs) and microbial communities in three pickles during storage were analyzed. The results showed that most alcohols, aldehydes, ketones, and esters decreased, while acids increased during storage. The dominant bacterial phyla were Firmicutes, Cyanobacteria, and Proteobacteria, and the dominant bacterial genera were Weissella, Streptophyta, Leuconostoc, Bacillariophyta, and Lactobacillus. Bacterial diversity significantly decreased during storage. Spearman correlation analysis revealed the high correlation of certain bacterial genera with the flavor and flavor formation of pickles during storage.

Regulation of the nitrite, biogenic amine and flavor quality of Cantonese pickle by selected lactic acid bacteria

Summary: Nitrite and biogenic amines in Cantonese pickles were analyzed, and some samples exceeded the limit standard. Three LAB strains with higher abilities to degrade nitrite and BAs were selected, and their application potential in controlling nitrite and BAs in Cantonese pickles was evaluated. These LAB strains could effectively control nitrite and BAs and enrich the concentration and type of organic acids and volatile substances in Cantonese pickles.

Microbiota Succession and Chemical Composition Involved in Lactic Acid Bacteria-Fermented Pickles

Summary: In this study, the chemical composition characteristics, flavor substances, and bacterial diversity of pickles fermented with different lactic acid bacteria were investigated. The results showed that lactobacillus enhanced the fermentation process and increased the production of organic acids. A total of 80 flavors were detected, with esters being more plentiful in pickles fermented with lactobacillus. Firmicutes were the predominant microbial phyla, with lactobacillus being one of the commonly encountered microorganisms. The study also revealed the correlation between lactobacillus and pH and organic acid content, suggesting the adaptability of microorganisms in the fermentation process.

Tetracycline residue alters profile of lactic acid bacterial communities and metabolites of ginger pickle during spontaneous fermentation

Summary: This study aimed to investigate the impact of tetracycline residue on the lactic acid bacterial communities and metabolites during the salted fermentation of ginger. The results showed that the tetracycline residue had significant effects on the occurrence, propagation, and succession of LABs, as well as the organic acids and volatile compounds. The transformation of LAB biomarkers induced by tetracycline residue was the main cause of the change in important volatile compound variables.

Changes of bioactive substances in lactic acid bacteria and yeasts fermented kiwifruit extract during the fermentation

Summary: Probiotic fermented fruit extract is a new food with potential health benefits. This study investigated the transformation of bioactive substances in kiwifruit extract fermented by lactic acid bacteria and yeast. The results showed that the lactic acid bacteria fermentation increased the levels of polyphenols, superoxide dismutase, and vitamin C, while the yeast fermentation resulted in a higher level of gamma-aminobutyric acid. The organic acid composition and flavor compounds also varied depending on the fermentation process.

The dominant bacteria in the fermentation process were mostly cultivable, with Leuconostoc mesenteroides and Lactiplantibacillus plantarum playing key roles in flavor formation. Microbial reconstruction using specific strains showed different fermentation and flavor characteristics.
