Amaranth Oilseed Composition and Cosmetic Applications

Evaluation of amaranth flour processing for noodle making

Summary: Amaranth, an ancient grain high in protein, was subjected to processing methods like dry roasting and jet-cooking to produce high protein, gluten-free noodles. These methods did not significantly alter the protein, starch, and ash content of amaranth flours. The noodles made from amaranth flours were softer than wheat flour noodles, demonstrating potential for replacing wheat flour in gluten-free noodle production.

Technological and nutritional properties of amaranth-fortified yellow cassava pasta
