Dough Rheological Properties and Characteristics of Wheat Bread with the Addition of Lyophilized Kale (Brassica oleracea L. var. sabellica) Powder

Summary: The study evaluated the rheology of dough and bread characteristics when 5% or 10% of wheat flour was replaced with lyophilized kale. The incorporation of lyophilized kale affected the rheological properties of the dough and resulted in a decrease in bread volume and porosity. The bread enriched with lyophilized kale also exhibited changes in color and texture, leading to a lower acceptability.

Dandelion Flowers as an Additive to Wheat Bread: Physical Properties of Dough and Bread Quality

Summary: The addition of dandelion flowers to wheat flour can increase water absorption, dough stability, as well as mineral, fiber, and fat content in bread. However, it has no positive effect on bread quality, leading to a decrease in loaf volume and crumb lightness, while increasing hardness and yellowness. Dandelion flowers enhance the antioxidant capacity and phenolic content in bread. Therefore, dandelion flowers can be a valuable ingredient for bread fortification, but the substitution of wheat flour should not exceed 2-3% in consideration of sensory results.

Influence of partial substitution of wheat flour with sprouted oat flours on physicochemical and textural characteristics of wheat bread

Summary: This study investigated the effects of sprouted oat flour on the texture of wheat bread. Results showed that the inclusion of sprouted oat flour decreased oat beta-glucan content and increased total phenols and gamma-aminobutyric acid. The rheological properties of the dough were determined to predict the textural attributes of the final bread products. Wheat bread with sprouted oat flour exhibited improved texture compared to wheat bread with unsprouted oat flour, including lower hardness, chewiness, and gumminess, and higher cohesiveness, springiness, and resilience. Confocal laser scanning microscope observations showed that unsprouted oat flour disrupted the continuity of the gluten protein network, while sprouted oat flour formed an orderly and dense network structure.

Chemical Compositions of Fruit and Vegetable Pomaces from the Beverage Industries

Summary: This study analyzed the chemical composition of apple, orange, and carrot pomaces and found that dietary fiber was the most abundant component, mainly consisting of cellulose and pectin. In addition, soluble sugars were also major components of the pomaces. Laurus nobilis, Aronia melanocarpa, and celastrol are all rich in antioxidant polyphenols and have potential therapeutic value in neurodegenerative disorders.

Functional Bread Produced in a Circular Economy Perspective: The Use of Brewers' Spent Grain

Summary: This study aimed to investigate the use of brewers' spent grain (BSG) as a functional ingredient in bread-making. BSG was characterized for formulation and origin, and the breads enriched with different percentages of BSG flour and gluten were analyzed to evaluate their overall quality and functional characteristics. The results showed that a combination of malted barley and unmalted durum and soft wheats yielded the best results, with high nutraceutical content and good overall quality of the breads.

Summary: This study developed shortcrust pastries containing different amounts of chokeberry pomace and adjusted their sweetness using different sweeteners. The results showed that increasing the proportion of chokeberry pomace improved the nutritional value of the pastries and exhibited antioxidant and anti-diabetic effects. Additionally, the use of erythritol as a sweetener improved the sensory attributes. The developed products could serve as excellent alternatives to traditional shortcrust pastries and provide a sustainable solution for fruit industry waste utilization.

Effect of Added Brewer's Spent Grain on the Baking Value of Flour and the Quality of Wheat Bread
