Effect of Fractionation and Processing Conditions on the Digestibility of Plant Proteins as Food Ingredients

Summary: This review assesses the impact of processing plant protein-rich ingredients on their digestibility. Different types of plant proteins, as well as various processing steps and conditions, have different effects on protein digestibility. Moderate and appropriate processing can enhance protein digestibility, while excessive processing may have detrimental effects. Therefore, to truly improve the sustainability of the current food system, processing, protein bioavailability, and the digestibility of plant-based foods should be considered together.

Estimation of crude protein and amino acid contents in whole, ground and defatted ground soybeans by different types of near-infrared (NIR) reflectance spectroscopy

Summary: This study aimed to use near-infrared spectroscopy to determine the concentrations of amino acids and crude protein in soybean. The results showed that the NIR models had acceptable predictive ability for crude protein and most amino acids, but were less accurate for Cys, Met, and Trp. The grinding process and lipid extraction improved the predictive ability of NIR spectroscopy. Additionally, the Fourier transformed NIR analyzer performed similarly to the diode array NIR analyzer.
