Study of Water Freezing in Low-Fat Milky Ice Cream with Oat β-Glucan and Its Influence on Quality Indicators

Magdalena Buniowska-Olejnik et al.

Summary: The study focuses on oat beta-glucan in low-fat milky ice cream and compares it with the stabilization system Cremodan (R) SI 320. Oat beta-glucan has a greater effect on the freezing temperature and inhibits the freezing process of free water in ice cream. Microscopy and analysis of ice cream samples show that oat beta-glucan forms more energy bonds and suppresses the growth of ice crystals better than Cremodan (R) SI 320. Oat beta-glucan also enhances the taste, overrun, and resistance to melting of ice cream, making it more similar to full-fat versions.

Gozde Kutlu et al.

Summary: This study aimed to determine the physicochemical and rheological characterization of Rocket seed gum (RSG) and found that RSG exhibited shear-thinning flow behavior and had high K value and hysteresis area. G' and G '' increased with increased RSG concentration. The findings suggested that RSG could be used as thickeners and gelling agents in the food industry.

Extraordinary high preservation of the dispersion state of Au nanoparticles during freeze-thawing and freeze-drying with gum arabic

Miki Kadowaki et al.

Summary: This study found that gum arabic is an ideal substance to prevent aggregation of Au nanoparticles during freeze-thawing and freeze-drying at low concentrations. Surface enhanced infrared spectroscopic analysis showed that gum arabic molecules were concentrated in the unfrozen liquid on the Au coating in the frozen state, while carboxylic groups in gum arabic molecules became closer to the Au surface in the freeze-dried state. Due to its high thickening property, gum arabic plays an important role in minimizing the aggregation of AuNPs during freeze-thawing, and the freeze-dried gum arabic forms a rigid amorphous matrix with an affinity for the Au surface, resulting in the inhibition of aggregation.

Summary: This paper presents a study of the fully developed flow of a self-similar (fractal) power-law fluid, modeling the rheological behavior of the fluid using the Ostwald-de Waele relationship. The results show that the rheological behavior of a non-Newtonian power-law fluid is significantly influenced by its self-similar structure, exhibiting a tendency towards shear thickening.

Emulsifying properties of Chinese quince seed gum in oil-in-water emulsions

Ye-Tong Yao et al.

Summary: The stability of Chinese quince seed gum (CQSG) in oil-in-water emulsions was investigated, with factors such as gum concentration, pH, and NaCl concentration affecting the emulsions. CQSG was found to reduce gravity creaming effects, increase spatial repulsion between emulsion droplets, and decrease surface and interfacial tension. Increasing CQSG concentration improved emulsion stability, while NaCl and acidic or alkaline environments had negative effects on stability.
