Quality Assessment of Honey Powders Obtained by High- and Low-Temperature Spray Drying

Summary: This study compared the quality of rapeseed and honeydew honey powders obtained by traditional high-temperature spray drying and innovative low-temperature spray drying methods. The results showed that powders obtained by the low-temperature spray drying method had higher polyphenol content, antioxidant activity, and aromatic compounds compared to powders obtained by the traditional method. Additionally, honeydew honey had higher levels of polyphenols, antioxidant activity, and composition of aromatic compounds than rapeseed honey. The production method was found to have a greater impact on the final properties of powders than the type of honey.

Development and Characterization of a Nutritionally Rich Spray-Dried Honey Powder

Comparison of ultrasound and microwave assisted extraction of diosgenin from Trigonella foenum graceum seed

Dehumidified Air-Assisted Spray-Drying of Cloudy Beetroot Juice at Low Temperature

Summary: This study investigated the physicochemical properties of powders obtained by spray drying cloudy beetroot juice using dehumidified air with or without carriers. Results indicated that drying without carriers at low temperatures (90 or 130 degrees C) was possible and resulted in powders with satisfactory properties. The addition of carriers led to lower betalain loss but lower overall process yields compared to powders without carriers. Best process yields were achieved for powders without carriers at 130 degrees C and 90 degrees C.
