A highly selective ratiometric fluorescent probe for doxycycline based on the sensitization effect of bovine serum albumin

Lu Ding et al.

Summary: Fluorescent probes with in-situ visual feature have gained attention for detecting doxycycline (DC), a widely used tetracycline antibiotic in animal husbandry. Bovine serum albumin-capped gold nanoclusters (BSA-AuNCs) were used as a ratiometric fluorescent probe to selectively detect DC among tetracycline antibiotics. BSA-AuNCs showed the highest response toward DC, with simple synthesis, short response time (1 min), and low detection limit. This work proposes an efficient strategy for designing fluorescent probes to selectively detect DC among tetracycline antibiotics.

Structural characteristics and foaming properties of ovalbumin-Caffeic acid complex

Kefei Chang et al.

Summary: This study investigated the effects of different caffeic acid (CA) concentrations on ovalbumin structure and foaming properties. CA improved foaming ability and stability, increased viscosity through hydrophobic interactions, and affected secondary and tertiary ovalbumin structure. Despite causing an increase in ovalbumin aggregation and a decrease in hydrophobicity, CA also enhanced solubility, absolute potential, and flexible molecular structure, ultimately improving the foaming properties of ovalbumin solutions.
