Dynamics of Listeria monocytogenes and the microbiome on fresh-cut cantaloupe and romaine lettuce during storage at refrigerated and abusive temperatures

Summary: In this study, the growth of Listeria monocytogenes (Lm) and indigenous bacteria on fresh-cut cantaloupe and romaine lettuce at refrigerated and abusive temperatures was investigated using culture dependent and independent methods. It was found that fresh-cut cantaloupe provided favorable conditions for Lm proliferation, while the growth rate of Lm on fresh-cut lettuce was lower. The microbial diversity of fresh-cut cantaloupe was also lower compared to fresh-cut romaine lettuce.

Scientific information is necessary to establish effective food safety standards to reduce pathogen contamination. The study found that minimizing field debris and defective fruits in harvested grape tomatoes is essential to reduce microbial load and prevent deterioration of wash water quality.

Comparison of Peracetic Acid and Chlorine Effectiveness during Fresh-Cut Vegetable Processing at Industrial Scale

Summary: This study compared the efficacy of chlorine and peracetic acid in reducing spoilage and pathogenic microorganisms in the washing stage of minimally processed vegetables. The results showed that both sanitizing agents had similar effectiveness in maintaining washing water hygiene and final product microbial quality. Peracetic acid generated fewer disinfection by-products in washing water compared to chlorine, making it a reliable alternative in the fresh-cut industry. Although both agents showed similar antimicrobial effects, chlorine produced more harmful by-products, particularly trihalomethanes, in processing water.

Reactivity of Peracetic Acid with Organic Compounds: A Critical Review

Summary: Peracetic acid (PAA) is an emerging oxidant and disinfectant that has gained increasing attention in wastewater treatment, food, and medical industries. This paper comprehensively reviews the reactivity of PAA with various organic compounds, highlighting PAA as a highly reactive and selective electrophile with significant variability in second-order rate constants. The study identifies sulfur moieties as exhibiting exceptionally high reactivity towards PAA and suggests the formation of oxygen-added reaction products from PAA oxidation. Further research is needed to evaluate a broader range of compounds and their oxidation products and toxicity in wastewater treatment.
