Germination improves the functional properties of soybean and enhances soymilk quality

Summary: The study comprehensively investigated the effects of soybean variety and germination time on the structural changes, antinutritional factor content, antioxidant activity of germinated soybean, and on the functional properties of soymilk. The results showed that germination led to increased antioxidant activity, decreased content of antinutritional factors, and changes in protein structure. Germination was found to be an effective, cheap, and green method for improving the functional properties of soybean and soymilk.

Ensuring Global Food Security by Improving Protein Content in Major Grain Legumes Using Breeding and 'Omics' Tools

Summary: Grain legumes, as a rich source of dietary protein, play a crucial role in securing global food security. Enhancing the protein content of grain legumes can alleviate the problem of malnutrition and hidden hunger. Genetic variability and molecular marker technology have been used to improve the protein content of high-yielding, low-protein genotypes. Functional genomics, proteomics, and metabolomics have shed light on the accumulation of proteins and metabolites in high-protein legume genotypes. In addition, genomic selection, high-throughput phenotyping, genome editing tools, and speed breeding protocols have great potential in enhancing the protein content of grain legumes and reducing global hunger risk.

Impact of germination on the proximate composition, functional properties, and structural characteristics of black soybean (Glycine max L. Merr)

Summary: This study investigated the impact of germination on the quality of black soybean flour. The results showed that germination resulted in significant changes in proximate composition, functional properties, structural properties, and antioxidant properties of the obtained flour. Germination increased the protein, crude fiber, and ash content of the flour, and also led to variations in its color attributes, functional properties, and pasting characteristics. Additionally, germination increased the total phenolic content, total flavonoid content, and DPPH radical scavenging activity of the flour, and caused microstructural changes in the starch and protein matrix.

Summary: This study investigated the effects of germination on the nutritional composition, physicochemical properties, functional properties, thermal properties, and color characteristics of pigeon pea. The results showed that germination significantly increased protein, dietary fiber, and antioxidant activities, while decreasing phytic acid, tannin, and trypsin inhibitor activity. The study suggests that short-term germination can be a natural approach to enhance the functional properties of pigeon pea flour for use in the food industry.
