New insights of the application of water or ethanol-water plant extract rich in active compounds in food

Anna Plaskova et al.

Summary: Plant extracts are natural antioxidants that can be used as food additives to extend shelf life and prevent undesirable changes in food properties. This review summarizes the recent literature on water or ethanol-water plant extracts used in various food products as flavors, colorings, and preservatives. The use of plant extracts as natural alternatives to synthetic antioxidants is expected to continue growing in the future, but challenges such as stability, purity, compatibility, price, and sensory aspects should be taken into consideration.

Influence of the extraction method on the recovery of bioactive phenolic compounds from food industry by-products

Emilio Gil-Martin et al.

Summary: Agro-food industries produce a large amount of non-edible waste and by-products, which can be used as raw materials for recovering active phytochemicals. Phenolic compounds are particularly important in this field due to their abundance in plant residues and their functional properties in nutraceuticals, cosmetics, and biomedical formulations. Sample extraction is necessary in research as it improves the value of target phytochemicals through desorption and dissolution of the matrix.

Primary and secondary antioxidant properties of scutellarin and scutellarein in water and lipid-like environments: A theoretical investigation

Maciej Spiegel et al.

Summary: The scavenging capability of scutellarin flavonoid against the OOH radical and its reaction mechanisms in both lipid-like and water media were studied. Scutellarin showed better Fe(III) ligand ability, while scutellarein exhibited the opposite behavior. The glucuronidation process affected the antioxidant properties of the systems.

Comparative evaluation of different methods for determining phytochemicals and antioxidant activity in products containing betalains-Verification of beetroot samples

Barbara Kusznierewicz et al.

Summary: This study presents methods for assessing the health quality of products containing betalains, comparing data on phytochemical composition of beetroot cultivars using various techniques. Identified that betalain contributes about 50% to the antioxidant activity in red beetroot. Photometric measurements are recommended for simple analysis of betacyanin and betaxanthin content, while liquid chromatography techniques provide more precise information. The combination of liquid chromatography with high-resolution mass spectrometry is recommended for more detailed metabolomics studies, identifying sixty-four phytochemicals in beetroot samples.
